When The Tribune spoke with Tom Maupin last year, the former owner of Tortilla Flats restaurant in downtown San Luis Obispo was considering reentering the restaurant industry. Maupin and his wife, Margie, had signed on to open Evos, a healthy fast-food restaurant franchise based in Florida, at the Higuera Plaza shopping center in San Luis Obispo near Trader Joe’s. Evos is short for “fast-food evolved.” The franchise offers burgers, sandwiches and shakes with 50 percent to 70 percent less fat than fast-food chains such as McDonald’s. * * * * * Maupin has spent the past year preparing to open the 2,800-square-foot restaurant. The restaurant will employ 15 to 25 people, many of whom he expects will be students. It also will begin hiring soon. Maupin plans to open another Evos in Oxnard shortly after the San Luis Obispo restaurant opens. If all goes well, he plans to expand rapidly. “We are looking to open 30 more restaurants within three to five years,” he said. Maupin will work with Evolution Management Group, a development firm he helped create, to open the franchises. Those Evos restaurants would be scattered in the Central Valley and along the California coast. Evos in San Luis Obispo will offer meals that range from $6 to $12 with an emphasis on healthy alternatives such as vegan options, low-carbohydrate meals and “air-cooked” rather than fried foods. The restaurant aims to be as environmentally conscious as possible by using natural products, organic produce and paper goods whenever possible, he said. WHAT DO YOU THINK?
